Created by Rip Esselstyn, this diet focuses on whole foods, lowering levels of cholesterol, and improving one’s overall health. A former professional athlete turned firefighter (Engine 2 is a real station in Austin, TX), Rip created this diet in response to the alarming realization that the majority of his station mates had very high cholesterol levels (one of them over 344). This is a plant-based diet and is supported by various other whole foods. Mostly vegetables, complemented by nuts and seeds (like walnuts and flaxseed), legumes and whole grains. Omega-3 fatty acids are a part of this diet but not through fish oils. Esselstyn instead relies on the above mentioned nuts and seeds for this essential nutrient. Heaps of excellent plant-based recipes requiring fresh produce with many suggestions to replace meat and products derived from meat. Excellent section on reading and understanding labels. This diet is primarily a vegan diet. Requires a costly doctor visit before and after. Suggests you clear your cabinet of food not included in the diet, which may be unrealistic for those on a lower income.
