I love making stir fry's! It is a great way to incorporate a ton of vegetables and not be lacking on flavor. I start with a bit of olive oil in the pan, then add anything/ everything I have on hand. For meat I use either chicken breast or shrimp, but you could use anything (tofu too). I usually add in onion, broccoli, snap peas, mushrooms, asparagus, red/green/ yellow pepper... literally anything I have on hand. If it is fresh, great, but frozen stir fry veggies mixes work just as well. Depending on the type of flavor I want is what kind of sauce or seasoning I add. Sometimes I will do just a bit of soy sauce (watch the salt!) and some lime juice. Other times I add tomato sauce and chicken broth. Sometimes coconut milk. Most of these are interchangeable with each other. I always then add red pepper seasoning (spicy!), pepper, and garlic. Curry seasoning can kick up the flavor and spice even more! Serve it all over some rice, delicious!
