BBQ Meatloaf

1 lb. ground round

1/2 cup BBQ sauce, divided

1/4 cup chopped onion

1/4 cup italian seasoned bread crumbs

2 large egg whites

1/4 tsp pepper

Preheat oven to 375.

Combine meat, half the BBQ sauce, onion, bread crumbs, egg whites, and pepper.

Shape into a 7x5 loaf in a rack on a roasting pan. Spread remaining BBQ sauce on top of loaf. Bake for 25 minutes or until desired doneness.

Interesting recipe, I like the idea of using BBQ sauce in meatloaf - I will have to try it sometime.

I make meatloaf using chuck steak, smoked bacon, pumpkin, vegetables, spices and eggs. I use a little almond flour to fill it out for a grain-free meatloaf. The pureed pumpkin is a filling agent too.

Op posted a great sounding recipe. Shaun I would not have thought of using pumpkin in meat loaf. Can you really taste it in the meatloaf?
