Healthy Egg Salad

Does anyone have a healthier egg salad recipe? I tried making some this weekend with greek yogurt and mustard but I didn't like the flavor at all. I don't like mayo and I want a healthier version, so I was hoping someone might have some other ideas. I appreciate any info if you have a tried and true recipe.

4 large egg(s), chopped, mash with fork
1 medium avocado, chop and smash with fork
1 small uncooked onion(s), minced or diced
1 tsp garlic powder

Mash egg and avocado. Dice or mince onions. Can add celery if you prefer. Salt and pepper as needed- same with garlic powder.

I will gonna try this one, I love eggs too I have my own recipe mixed with fried rice.

Thank you, twinsmommy. That sounds like a protein delight. I'll have to try it and let you know I liked it. I might even turn that into a tuna and egg or salmon and egg salad.

You're welcome. I sometimes add chopped chicken to it just to mix things up. Hope you enjoy it.

Twinsmommy, thank you so much for that recipe!! I can't wait to try it. I love avocado too, so it's perfect. My daughter is just like me, so I'm sure she will be a fan also.

I'll let you now. Tell me, can you add some mayo? I'm just used to hearing mayo in any type of salad, so I'm wondering if it will be moist enough without it? I could just do it myself, but I don't want to waste my eggs or avocado. :mrgreen:

Sugarhill, that is why I was asking for some recipe suggestions, because I've always heard of mayo in salads like this. But I wanted a healthier version (not just using a fat free mayo) to try. I tried using plain yogurt instead of mayo, but it was disgusting.

I made an egg salad a few days ago. I used romaine lettuce, spring onions, cucumber, boiled eggs (obviously), cress, and red onion caramelized in butter. I dressed the salad with lemon juice and extra virgin olive oil. A very healthy and delicious meal!
