If I am short on time but have some thawed chicken laying in the fridge I usually do this recipe which can be cooked in 25-30 minutes.
olive oil
asparagus
cherry tomatoes
rosemary
chicken breast
Step 1:In a separate bowl mix cut tomatoes, asparagus with the olive oil and rosemary, salt and pepper to taste.
Step 2: Place in either a class baking dish OR make a little boat out of tin foil (easier clean up). Put mixed veggies on bottom and then lay your chicken breast on top.
Step 3: You can also add some white whine before you cook. Cook in the oven for 25-30 minutes at 350.
Done. Drizzle some balsamic vinaigrette on your chicken if you like, it makes it taste great.
Feel free to experiment also, if you are not a fan of asparagus or tomatoes you can easily sub in broccoli or some other greens
